Chana daliya / roasted chana dal : ¾ cup
Cashew nuts : ¾ cup
Almonds : ½ cup
Peanuts: ¾ cup
Sesame seeds : ¼ cup
Pumpkin seeds: ¼ cup (optional)
Coriander seeds: 1.5 tsp
Cumin seeds : 1 tsp
Fennel seeds : 1 tsp
Black pepper: 1 tsp
Star anise: 1-2
Toast and roast the cashews, almonds and peanuts for 5 minutes. Cool these and add Chana daliya and grind into fine powder.
Now roast sesame seeds, fennel seeds, pumpkin seeds, coriander seeds and cumin seeds. Add the whole spices (black pepper, cloves, star anise) and roast for a minute. Cool it down and grind into a fine powder.
Mix both the nut and seeds powder together. Kaari masala is ready. It stays good, if kept properly sealed, for 1 year.
Use it to make Mutton/Chicken Kaari.
