This stuffed methi aloo paratha is a very good breakfast dish. Pair it with mango launji, yogurt or any pickle and it is a very filling Indian breakfast.
This recipe is a Methi Aloo Paratha recipe in Punjabi style. I have added some paneer as well, but paneer is optional.

Methi/ Fenugreek has numerous health benefits and tastes good too. Methi is good for heart, prevents anemia, good for the digestive system and is a strong antioxidant. But I eat these Methi Aloo parathas just for the delicious taste 😀
So let’s see How to prepare aloo methi parathas
Makes 5 aloo methi parathas
Wheat Flour for kneading dough – around 1 cup
Salt to taste
Water – as required
Oil – 1-2 tsp
For the Filling:
Boiled and Mashed Potatoes – 2
Green chillies – 2 (chopped finely)
Methi/ Fenugreek leaves – around 1 cup (washed and chopped)
Red chili powder – 2 tsp
Minced garlic – 1tsp
Cumin seeds/ jeera – tsp
Salt as per taste
Paneer 1/2 cup (Optional)
Ghee for tempering and roasting
For the dough: Knead a dough with wheat flour, some salt and water. Add a tsp of oil and knead well until it is smooth and pliable.
For the filling, Take a wok, heat some ghee, add 1 tsp jeera, chopped green chilies, turmeric powder, minced garlic, chopped onions, saute. Now add chopped Methi leaves and saute again. Switch off the flame. Add mashed potatoes, mashed paneer(optional) salt, chili powder. Mix well and add some Amchur powder ( amchur powder is optional but it takes the paratha taste to the next level, try not to skip). Cool down the mixture. Make small balls.
Divide the dough in medium shaped balls and flatten the balls on the palm.
Put the methi-potato filling balls on each flattened dough piece, seal and roll out into a paratha.
Heat tawa and place the paratha. Smear ghee when the paratha becomes golden brown on both sides.
Enjoy with green chutney, yogurt or pickle.
