Nariyal Burfi

This wonderful fudge can be made with left over condensed milk or gulab jamun sugar syrup also known as chashni.

This is how i make Sugar Syrup:
Combine 2 cups sugar and 2 cups water and boil for 6-7  minutes stirring continuously. You can now use it in the recipe.

Sweet Tamarind Dates Chutney

Tamarind Chutney

The lip smacking street foods of India popularly known as Chaats is incomplete without a dollop of this Chutney.

It has a unique taste, sweet, tangy and spicy with a hint of cumin and fennel.Simply DELICIOUS !

Goes very well with Pani puri, sev puri, dahi bada, samosa, kachori and a lot of wonderful snack items.

Make it and Store in a glass jar with a lid in fridge and use as required.

Note: This chutney can be made without dates too and the result is just as good. Please adjust the amounts  as per taste; some like it more tangy than sweet or vice versa.

Chicken Lasagna from scratch – Indian Masala- My Style

What I love about this lasagna is making homemade noodles.  It is much easier than it seems and you don’t even need a pasta machine.

This recipe is for a general pasta noodle, so it can be used to make ravioli as well.

This recipe tastes very Indian masala like 😀 (I sometimes use the butter chicken sauce for layering )

Super easy and very filling dish that is very very versatile. Add or subtract veggies or meat according to your choice or availability and it will taste awesome always.

Add Salsa or bechamel sauce or your favorite homemade sauce and own this recipe, make it yours. Nom nom nom…..

A Hundred Years Ago

I recently had a roast in the oven, and was looking for a side dish to accompany it, so when I happened upon a hundred-year-old recipe for Onion Souffle, I decided to give it a try.

Onion Souffle contains onions and bread crumbs, and reminds me a little of stuffing.  This side dish had a robust onion flavor and nicely complemented the roast, though it was a little dry. The next time I make this Souffle, I’ll probably drizzle a little gravy or other sauce over the top.

Paneer Butter Masala |Cottage cheese in gravy

Paneer or Cottage cheese is a good source of proteins, calcium, vitamin A and Vitamin B. It is super healthy and nutritious.

Best part is Paneer can be made at home from scratch –

The process starts with curdling milk. This is done by adding an acidic substance like lime juice or vinegar to warm milk.

When the acidity of the milk increases, curds of casein protein separate from the whey, the liquid part of the milk. Add more water to lessen the vinegary taste.

Now, filter this curdled milk with a muslin cloth/cheese cloth and try to remove all the water/moisture. Take the cloth with the cheese inside and press it with both hands, some more water will be released. Keep the tied cheese below a heavy pan or a heavy kitchen object and leave for some time. After sometime the cheese can be cut into pieces and used.

Dinner parties are incomplete without a sumptuous Paneer Dish and here is my favorite. Easy but simply Delicious.

Melt-in mouth grilled Paneer cubes in a rich onion-tomato-cashew gravy.

Tofu can also be substituted in place of Paneer/Cottage Cheese

Nutritious Hara Bhara Kebab | Green peas and Spinach patty

A nutritious green mix of Spinach, Peas and Potatoes with a cashew on top makes this Kebab delicious as well as very healthy.

Perfect party starter, these can be made into small flat discs and then thread into toothpicks. Perfect finger food.

Loaded with veggies, this kebab is a very good way to feed your kids greens.

I serve it with Dahi ki Chutney.
